Red Pepper and Corn Salad: 3 ways

While thinking of new fresh summer veggie combinations, I started cooking with corn and roasted red pepper.  I really love the combination!  It is so much cheaper to roast your own red pepper than buying the jarred kind… and really easy.  This week, I roasted my own red peppers, chopped them up, added them to some frozen corn, and came up with three great side dishes!

To roast red peppers:

  • Cut the red peppers lengthwise, into fourths.  That is, cut around the core.
  • Lay each slice on a cookie sheet, with the skin facing up.
  • Lightly drizzle with olive oil, or mist with olive oil.
  • Lightly sprinkle salt and pepper.
  • Bake at 375 degrees for about 40 minutes, until the edges begin to char.
  • Let them cool, then peel off the skin with your fingers.  It should peel off easily.

Using the freshly roasted red peppers, I chopped them into small bit sized pieces.  I then added the red pepper pieces to a bag of frozen corn, in a large pan.  Heat over medium for about 20 minutes, until the corn thaws and heats.

Add your favorite add ins, and you have a great summer salad!

Inside Out Pesto

While fresh basil is in season, I try to use it in any dish I can.  Instead of making the usual pesto with fresh basil, I tossed pasta with some of the traditional pesto ingredients for a summer fresh dish.  Flavorful and fresh, as well as super easy to make on a hot summer night!

Inside Out Pesto

Pieces:

  1. half of a bag of gluten free pasta (I used rice pasta)
  2. 2 tbsp. vegan butter
  3. 2 tbsp. soy creamer
  4. one quarter cup crushed walnuts
  5. 1 tbsp. grated lemon zest
  6. 2 tsp. finely chopped garlic
  7. 5-6 basil leaves, cut into small strips
  8. one half cup grape tomatoes, cut in half
  9. 4 tbsp. goat cheese, crumbled
  10. salt and pepper to taste

Process:

  1. Cook the pasta according to package directions.
  2. While the pasta is cooking, toast the crushed walnuts over a saute pan and medium heat, just for 3-4 minutes.
  3. Drain the pasta and toss it with the vegan butter and soy creamer.
  4. Plate the pasta.
  5. Sprinkle some of the lemon zest, garlic, basil strips, grape tomatoes, goat cheese, walnuts, and salt and pepper.
  6. Toss and serve hot.

Roasted Red Pepper Hummus

I decided to take on the challenge of making home made hummus to bring to a cookout this past weekend.  It was so easy!  I wouldn’t call it a challenge at all.  It was quick and easy to make, and definitely cheaper than buying hummus in the grocery store.  I will definitely make this again!

Roasted Red Pepper Hummus

Pieces:

  1. 1 red pepper, roasted in the oven for about 30 minutes and then skin peeled off
  2. 2 cans of chick peas, drained except for 2 tbsp. liquid from each can
  3. 4 tbsp. olive oil
  4. 1 tbsp. parsley flakes
  5. 1 tbsp. grated lemon rind
  6.  1 tsp. sea salt

Process:

  1. Combine all ingredients in a food processor.
  2. Pulse on high until smooth.
  3. Serve with your favorite gluten free chips!

Gluten Free Protein Bar

Recently, I received an email to try a new gluten free protein bar called “Smart for Life.”  I thought it was a great item to try because snacks and protein bars are so hard to find gluten free!

I was sent 3 (free) Smart for Life Protein Bars… 2 in chocolate flavor and 1 in the green tea flavor.

I tried the chocolate flavor and was really impressed with the taste!  It was soft and very chocolately.  Thumbs up!  But, it does have some dairy in it, which did bother my stomach a bit.  But, if you can stand dairy, it’s a great product!

Most impressive was the nutrition label… look at all that protein!

 

Thanks, Smart for Life, for letting me try these protein packed and delicious bars!  Great snack!

Friends, Food, and Fun

Last night, I had the pleasure of having dinner at a friend’s house.  In true friend fashion, Emma cooked an above and beyond gluten and dairy free meal!  I can’t express enough how much it means to me when friends and family cook not only something that I can eat, but something delicious.  I know that it is a challenge, but Emma did it with a smile!  I was so impressed with the meal that we all shared last night, and I had to show you.

We started with corn chips and sweet potato chips dipped in homemade red pepper bean dip… so delicious!

Grilled chicken with a genius glaze… whole grain mustard, apricot preserves, and salt and pepper combined in a food processor.  The sweet and spicy combination was perfect for grilled chicken.

Spinach salad with roasted red peppers and asparagus… all my favorites veggies, and so pretty.

Millets!  A gluten free grain we had never heard of before, but were brave enough to try.  I’m a new fan!  I can already see all the possibilities with these…

No meal is complete without dessert… gluten and dairy free peanut butter chocolate chip cookies, fresh fruit, and So Delicious ice cream.  I think we all had seconds on dessert.

I love cooking, eating, and discovering new allergy free recipes, but I love sharing the experience with close friends even more.  Thanks for a wonderful dinner!

Foodie 100!

I am so happy to tell you about my involvement in a great new food site!

The editors at Foodie.com emailed me a few weeks ago looking for bloggers and recipes to feature on their site in their “Foodie 100.” I submitted a bio, 3 original recipes, and 10 links to recipes already published on my site.  They asked 100 bloggers to participate, and the site launched today!

I have spent this afternoon looking around the site and getting to know all its features.  So impressive!  It is a community where you can share recipes, tips, discussions, and blogs all about food.  They already have so many great recipes featured, and many discussion topics going.  And you can find Balanced Fork, Healthy Life recipes as well!

I hope you sign up for the site and poke around… there is so much to look at.  When you sign up, you have to submit your name and email as well as a photo.  You can then search recipes, post on discussion boards, and “follow” other foodies.  Try to find me and my cranberry themed original recipes… Cranberry Peach Sparkling Cocktail, Prosciutto, Cranberry and Leek Risotto, and Cranberry Almond Quinoa Salad!

I am so proud to be a part of this site, and hope you enjoy it as much as I do!

Snacks!

I’ve been doing the leftover thing recently for dinner, so my kitchen hasn’t been cooking lately.  However, I wanted to share my favorite recent snacks that keep sneaking out of my cupboards.  A couple were discovered at my local grocery store, but I also made some great finds at Target!  (Really, what doesn’t that store have?!)  The snacks are all of the sweet or salty variety… enjoy!

Chips that taste like popcorn, and are gluten free!  I’m not the biggest fan of popcorn, but these are really good.  I have tried the sea salt and kettle variety, both delicious.

Sweet Potato Tortilla Chips!  A great way to add some more vitamins with sweet potatoes instead of just corn.  And gluten free!

I bought prepared guacamole at the grocery store to go with the Sweet Potato Chips.  This picture was taken a few days after opening… and no brown spots.  I hate it when guacamole goes bad so quickly.

Dairy free chocolate chunks… found at Target!  They are so good with some trail mix.  I can’t even tell the difference between them and “real” chocolate chips.

Can you read the fine print?  This is a jar full of peanut butter AND chocolate!  Good on a banana, toast, in oatmeal, or just on a spoon.  Also found at Target.

Food Fotos

This weekend, I had the wonderful opportunity to spend some time with family.  It was the perfect way to spend a long and relaxing weekend.Not only was it nice to spend time together to share stories and laughter, but the food was just as great!  I am always so appreciative when people consider my allergies when bringing food to a gathering… and this weekend was no exception.  I could eat everything that was brought!  My family was so thoughtful in bringing and making food that I could share with them… they really went above and beyond.

So here are some drool worthy gluten and dairy free photos for future dish inspirations…

Beer Tastings

One of the things I miss most about being gluten free is enjoying a beer.  For a while, many people told me to try Redbridge, which is gluten free and easy to find.  I did give it a shot, and it was… okay.  Not my favorite beer, but I guess it could work if I was really craving a beer.

But recently I came across 3 new gluten free beers, all so delicious!

The first one is made from rice.  It is light, citrusy, and very thirst quenching.  Similar to a white ale.

The second one is my new favorite.  For someone who was a big Guinness fan, this is an excellent compromise.  It has a genuine taste similar to a porter or a stout… dark and rich.  It is made from millet, buckwheat, and rice.

The third one is raspberry flavored… which I never imagined I would find!  Its base is corn, and it is very similar to a raspberry UFO.  Really delicious!

Although these beers are hard to find in restaurants and bars, it is nice to see them in my fridge as an icy cold option!

New Kitchen Additions

Like a man in a hardware store buying tools, I love getting new kitchen gadgets.  You can only cook great food if you have the right tools.  I have three new additions to my kitchen that I just have to share because I don’t know how I lived without them before.

1.  My Staub grilling pan.  You know you are foodie when your favorite birthday present is for your kitchen.  Because I don’t have a grill, I got this grill pan that has grill lines on the bottom of the pan, as well as on the lid!  You heat the grill pan up until it is very hot (both top and bottom pieces), add your meat, cover with the top lid, and listen to the sizzle.  Perfect grill marks!  Now I can grill all year long, right on my stove.

2.  My bendable cutting board.  Sheer genius.  The cutting board lays flat, and then can bend in different directions so you can slide the veggies right into whatever you are cooking.  No more spilled veggies over the side of the pan.

3.  My salt and pepper grinder.  Not grinderS… grinder.  Sea salt and black pepper in ONE grinder.  A few twists, and you have the perfect black and white seasonings.  This is where my mom and I would ask ourselves why we didn’t think of this and become millionaires…
