Edamame Fried Rice

Here’s my fresh fried rice recipe that has extra protein and fiber in it, as well as wheat free soy sauce.

Edamame Fried Rice

Make 1 cup uncooked jasmine rice according to directions.

Take two pounds of chicken tenders and cut them up into bite sized chunks.

In a large stir fry pan (coated with cooking spray), combine chicken tender chunks and one bag of frozen peas and carrots and simmer on medium until chicken is cooked through, keeping pan covered and stirring occasionally.

Cook 2 cups of shelled edamame according to package directions (can be found in frozen section of food store).

When chicken is cooked through and rice is done, fold the cooked rice and edamame into the pan with the chicken and peas and carrots.  Stir to mix well.

For sauce, mix well three fourths of a cup rice vinegar, three fourths of a cup sesame oil, 1 tblsp minced garlic, one fourth of a cup wheat free soy sauce (tamari), and 2 tsp ground ginger.

Put the mixed sauce over the rice mixture to coat and combine.

Can put over low heat while combining to ensure it is hot.
